Chef Endo, of Hilo, has traveled the world adding skills to his already impressive repertoire and to improve his sense of how important fresh local products are in the creation of Italian cuisine.
When Hawaiian Restaurateur D.K. Kodama (owner of Sansei) and Master Sommelier Chuck Furuya opened Mediterranean bistro Vino, Endo was chosen to be its chef. Today, Endo is a shy but formidable force in the Hawaiian scene, putting out fresh pasta and intriguing takes on local dishes using Italian influences.
The evening will include a five course dinner with wine pairings.
